Happy Teacher Appreciation Week! :)
“Teachers, the people who educate us and give us the vital knowledge which we need to live our lives. They encourage, support, discipline and prepare us for the road ahead and now it’s time for us to show them our appreciation.”
I always look forward to this not only for the awesome gifts (haha :D) but for the appreciation I get from my students. I’ve been teaching for 3 years and it has been such a rewarding experiences. Every year has brought challenges but they were all rewarding. It isn’t about me impacting their lives but them impacting mine. I wouldn’t be the teacher I am today if it weren’t for all my students. ♥

Chocolate Nutella Cupcakes

Ingredients for cupcakes:

  • 1/2 cup butter, room temperature
  • 1 1/4 cup sugar
  • 2 large eggs, room temperature
  • 3/4 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1 tsp vanilla

Ingredients for nutella buttercream:

  • 1/2 cup butter, room temperature
  • 1 cup Nutella
  • 1 cup powdered sugar, sifted
  • 1-2 Tbsp milk

It’s been a while since I’ve baked something. I’ve been so busy with life that I haven’t had the opportunity to bake. Recently I had a reunion with some of my closest girlfriends and we always make a point to bake something delicious. What better ingredient to join us all together was Nutella! I found this recipe while I was searching through Pinterest and couldn’t wait to try this out. 

Everything about this recipe was extremely easy. The only setback I had was piping the icing onto the cupcake. Honestly it was my 2nd time piping icing so I’m not actually pro enough yet. My icing needed to be a little more fluffier so I’ll definitely have to work on it. Overall everything tasted delicious and I can’t wait to make more of these.

Chocolate Nutella Cookies

Ingredients:

  • 1 1/2 sticks of unsalted butter, room temp.
  • 3/4 cup of brown sugar
  • 3/4 cup of white sugar
  • 1 cup of Nutella
  • 1/2 tsp of vanilla extract
  • 2 whole eggs
  • 2 cups & 2 tsp of all-purpose flour
  • 1/4 cup of unsweetened cocoa
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup of mini chocolate chips

This recipe is beyond delicious. It makes about 6 dozen cookies so it’s definitely great for big parties or small get-togethers with friends and family. Kids will definitely love the chocolatey taste and everybody loves Nutella! This recipe does give the option of adding in hazelnuts, but it still tastes just as great without them. It’s definitely a win-win for everybody when you bake these delicious cookies, unless you’re allergic to hazelnuts. 

I’m not a big fan of having cookie batter stuck under my nails so I used my ice cream scooper to make them all the same size and shape (the batter scooped up looks like scoops of real ice cream!) This was quick and easy to make and I had a great time making them with my close friends.

Looking back on the months that have gone by as a new year starts and an old one ends, we contemplate what brought us joy and we think of our loved ones and our friends. I hope you were able to fulfill everything you said you would do and if not, you have a whole new year to fulfill them (just be sure you do them. Don’t procrastinate!) May this new year bring you many opportunities to your way, to explore every joy of life (including baking!) and may your resolutions for the year ahead stay firm, turning all your dreams into reality and all your efforts into great achievements.

Cupcake liners and toppers

I believe using cupcake liners is a great way to incorporate the holiday theme or even simply your own personality into your cupcakes. You can purchase all kinds of cupcake liners at most craft stores and grocery stores. If you’re using simple white cupcake liners, you can use cupcake wrappers. Most online websites offer templates for simple wrappers - for example: solid, glitter, swirls, polka dot, or holiday prints. If you want to get really intricate, there’s a paper craft machine called Cricut that offers more fancy cupcake wrappers, like Halloween, Christmas, and Valentine’s Day wrappers. Martha Stewart also sells high-quality cupcake wrappers at your local JoAnn’s or Michael’s craft store. Maybe it can be a possible Christmas gift for you. (Click here.

Cupcake toppers can come in a variety of ways. The typical toppers that come from grocery stores are plastic rings with certain cartoon characters on them, but they’ve also invented cuter, more sophisticated toppers. This is another great way to incorporate the theme of a party or holiday celebration into your cupcakes. Cupcake toppers are fairly easy to make. All you need is a cute print-out or cut-out of an image, toothpick, and glue to put it together. However, you want to make sure your cupcakes are speaking for itself, not the decorations you put on them.
